Homemade Smoked Paprika Baked Beans

These are much healthier and full of flavour. There is a rich tomato sauce with a smoky background and a little hint of sweetness. Serve with a some grated cheese and fresh herbs on toasted sourdough." Holly

 

 

Ingredients (makes 2 portions)

 

Olive Oil

Half a red onion, finely chopped

1 clove garlic, crushed

1 teaspoon smoked paprika

Spring of thyme, leaves taken off stalk

1 tablespoon maple syrup

1 tablespoon tomato puree

1 tablespoon tamari or soy sauce

150g chopped tomatoes (tinned)

1 tin cannellini beans

Black Pepper

 

Method

Heat a dash of olive oil in a saucepan and add the onion and garlic. Cook gently until the onions are soft, about 5 minutes.

 

Stir in the paprika, thyme, maple syrup, tomato puree and soy sauce and cook for 2 minutes.

 

Add the chopped tomatoes and beans and simmer for 15 minutes, stirring occasionally, until the sauce has thickened.

 

Season well with black pepper and serve.
