Homemade Smoked Paprika Baked Beans

Looking for a way to wow Dad this Father's Day? Treat him to breakfast in bed with this delicious recipe by Holly Nelstrop

"This is a perfect recipe to cook for your Dad on Fathers Day to make breakfast extra special. Once you’ve made baked beans yourself you’ll never go back to tinned. These are much healthier and full of flavour. There is a rich tomato sauce with a smoky background and a little hint of sweetness. Serve with a some grated cheese and fresh herbs on toasted sourdough." Holly

Ingredients (makes 2 portions)

Olive Oil

Half a red onion, finely chopped

1 clove garlic, crushed

1 teaspoon smoked paprika

Spring of thyme, leaves taken off stalk

1 tablespoon maple syrup

1 tablespoon tomato puree

1 tablespoon tamari or soy sauce

150g chopped tomatoes (tinned)

1 tin cannellini beans

Black Pepper

Heat a dash of olive oil in a saucepan and add the onion and garlic. Cook gently until the onions are soft, about 5 minutes.

Stir in the paprika, thyme, maple syrup, tomato puree and soy sauce and cook for 2 minutes.

Add the chopped tomatoes and beans and simmer for 15 minutes, stirring occasionally, until the sauce has thickened.

Season well with black pepper and serve.
